The hotel was founded by migrants from rural Scotland. They named it after Roy Watherston, a famous Scottish farmer known for his contributions to Shorthorn cattle breeding. Being located in a quiet corner of Grigg Heights near two hospitals and a low-emission medical supply factory, it was popular with tourists wishing to visit the cultural sights of nearby Reganbank. The hotel was especially famous for serving fine beef dishes.
In 2000, the hotel was shut down when the Mad Cow Disease turned Scottish beef into a shelf warmer.
In 2001, the Summers family took over. They kept the old name and the wide selection of beef meals. But, having learned of what made their predecessors fall, they imported the beef from Argentina and displayed the meat's origin prominently.
